Pudding Cake Recipe


Oh, Puddin'! This cake is good!

This recipe is from my kids' Great-Grandma... they call her Super Grandma! Super Grandma raised 7 kids and boy is she a wealth of information for doing things the Common Cents way. This easy recipe is a great way to stretch one box of cake mix to feed a whole big group of people. Pudding Cake is probably one of my most favorite desserts!

Pudding Cake Recipe
1 box cake mix prepared as instructed on box
1 cup sugar
1 heaping Tbs cocoa powder
2 cups water
1/2 bag of mini marshmallows


Preheat oven to 350. Combine sugar and cocoa powder in bottom of 9x13 cake pan. Slowly add 1/2 cup of water and mix well, then add remaining 1 1/2 cups of water and again mix well. Cover with mini marshmallows to form a single layer. Spoon half of prepared cake batter on the top (remaining half can be used to make a second pudding cake or to make cup cakes.) Bake for 30 minutes.


Now it is a matter of great debate in the family as to what temperature this is best. Some family members prefer it warm out of the oven, some at room temperature and still others like it cold from the refrigerator. Experiment with it to see which way you like best. I prefer it cold with a little cool whip on top.

To me this cake is a little magical: one cake mix, two cakes, ooey-gooey chocolatey pudding goodness, with lovely cake on top. That's good stuff!
