This was a little experiment last week that worked and tasted delicious, so I thought I'd share. A perfect recipe for all those juicy, sweet and tempting strawberries that are in the grocery stores this time of year.
Spinach and Strawberry Salad
3 cups spinach leaves
1 cup strawberries quartered and sweetened if necessary
3-4 extremely thin slices of red onion
Combine in medium size bowl and top with Vinaigrette
Vinaigrette Dressing Recipe
1/2 cup Extra Virgin Olive Oil
1/2 cup Balsamic Vinegar
2 Tbs honey
1 clove crushed garlic
1 tsp ground mustard
1/8 tsp salt
ground pepper to taste
Blend all ingredients in blender for about 30 seconds to emulsify. Pour onto salad. There will be dressing left over, but just save it for future salads.
This salad is a fantastic blend of sweet and tangy. Give it a try the next time those strawberries are winking at you in the produce department!
