Chips-they're for more than just dipping
I've seen some excellent deals the past few weeks on tortilla chips, some as low as $1.50 per bag. It’s got me thinking about my most favorite thing to do with tortilla chips. This recipe takes about 1 hour to make, from start to finish and it is de-licious! It is a guaranteed crowd pleaser, even for the picky eaters in the family.
Chip Casserole Recipe
1 lb ground beef
2 8 oz cans of tomato sauce
1 small can black olives
1 c sour cream
1 c cottage cheese
1 small can of chopped chilies
1 bag of tortilla chips
2 c grated cheddar cheese
Preheat oven to 350 and spray a 13x9 inch pan. Saute beef in large skillet over medium high heat. Add tomato sauce and olives to cooked beef. In medium size bowl combine sour cream, cottage cheese and chilies. Open one end of chip bag slightly (to let the air out) and crush chips, while still in bag. Place half of crushed chips in previously sprayed 13x9. Cover with half of meat mixture, half sour cream mixture and 1 cup of cheese. Repeat the layers and garnish top with a few chips. Bake uncovered for 30-35 minutes.
I like to serve this with corn and fruit. It is a chip lasagna of sorts and is great reheated for lunch the next day.
That's my two cents.
